Artichokes Purple

Artichoke also called globe artichoke or French artichoke, large thistlelike perennial plant of the aster family grown for its edible flower buds. The thick bracts and the receptacle of the immature flower head, known as the heart, are a culinary delicacy. Artichokes are low in fat while rich in fiber, vitamins, minerals, and antioxidants. Particularly high in folate and vitamins C and K, they also supply important minerals, such as magnesium, phosphorus, potassium, and iron.
